A wine in the style of a 2-point Hungarian Tokai, but using Clos Pepe Chardonnay picked in January 2002 (VERY late harvest from the 2001 vintage).
Botrytis concentrated the Chardonnay flavors into apricot, honey and a smoky mineral character. The wine was partially sherrified during its time in the cellar, and the flavors are very sherry-like. Not sticky sweet--only about 3% resisdual sugar, so this wine is better with blue cheese or slightly salty desserts.
Try this unique sweet wine with Stilton, Roquefort or any other blue cheese, or with a pear tart with a bit of blue cheese melted over the top. As the wine is already sherrified, it should last for a long, long time in the cellar, but it is ready to sip with cheese now. 15.8% alcohol, 3% residual sugar, 3.35 pH, 7 g/l TA.
